Caught Some Grouper Now What – Favorite Grouper Recipes

Grouper meat cooks up very firm, with big flakes and holds its moisture better than many other fish. Since Grouper is a leaner fish you might need to baste it when broiling or baking it. Two pf the favorite ways to cook Grouper is grilling or frying it. You can also poach, steam, bake, broil and sauté Grouper.

Grouper sandwiches are very popular in the Florida Keys and you can use Grouper that has been Baked, Sauted, Fried and Grilled.

If you are baking or broiling Grouper cook no more than 10 minutes per inch of thickness with oven temperature between 400-450. The fish is done when the meat becomes opaque and flakes easily with a fork.

If you have very large, thick fillets make sure to butterfly them first if you are planning on grilling them, to reduce the thickness and shorten the grilling time.

Smokey Grouper with Spinach

INGREDIENTS
Grouper – 4 pieces
Smoked Paprika
Italian Seasoning
2 Tbsp Olive oil
4 Tbsp Butter
1 shallot, finely diced
1/2 cup White Wine
1 bag of fresh Spinach
salt & pepper, to taste
Lemon Juice

METHOD
Sprinkle some smoked paprika and a small amount of Italian Seasoning on the Grouper and set aside.
Place butter and olive oil in a saute pan over medium heat.
When the pan is hot and bubbling, add the Grouper.
Saute for a few minutes on each side.
Remove fish from pan and set aside, covered with foil to keep warm.
Add the shallot and white wine to pan and simmer for a few minutes.
Add the fresh spinach and saute over medium-high heat until the spinach is limp.
Season with a little salt and pepper.
Place spinach on plates and top with fish.
Spoon sauce over fish.
Squeeze fresh lemon on top and serve immediately.

Key West-Style Baked Grouper

You’ll enjoy a taste of Key West with this citrus flavored grouper that will make you feel like you are on a romantic, tropical beach.

Cook time – Ready In – 

Ingredients

  • 115 g softened butter, plus more for baking dish
  • 4 (8 ounce) fillets grouper
  • 6 g salt
  • 6 g lemon pepper, or to taste
  • 6 g garlic powder
  • 4 g onion powder
  • 60 ml key lime juice
  • 60 ml fresh orange juice
  • 12 slices lime
  • 8 oranges

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Lightly butter a 9×13-inch glass baking dish and set aside.
  2. Season the grouper fillets with salt, lemon pepper, garlic powder, and onion powder; place into prepared baking dish. Spread about 2 tablespoons of softened butter over the top of each fillet. Pour in the lime and orange juices, then cover each fillet with 3 slices of lime and 2 slices of orange.
  3. Bake in preheated oven until fish is opaque and flakes easily with a fork, about 15 minutes.

Florida Grouper Sandwich with New Potato Salad

Grouper Sandwich with New Potato Salad

Ingredients:

Florida Grouper Sandwich
  • 8 (3-ounce) grouper fillets, sliced thin
  • 1 teaspoon Cajun seasoning
  • 8 small rolls
  • 1 small head romaine lettuce, shredded
  • 2 Florida tomatoes, sliced
  • 1 red onion, sliced thin
  • 1 tablespoon oil for cooking
  • 1/3 cup mayonnaise
  • ½ lemon, juiced
  • 1 teaspoon paprika
  • cayenne pepper to taste
  • sea salt and fresh ground pepper to taste
  • New Potato Salad
Florida New Potato Salad
  • 6 cups Florida new potatoes, quartered, cooked and cooled
  • 2 tablespoons rice vinegar
  • 1 tablespoon olive oil
  • 2 tablespoons mayonnaise
  • ½ cup assorted color Florida bell peppers, diced
  • ½ cup red onion, diced
  • 2 tablespoons fresh parsley, chopped
  • sea salt and fresh ground pepper to taste

Directions:

Florida Grouper Sandwich
  1. Preheat a large sauté pan over medium-high heat.
  2. Lightly season the grouper fillets with Cajun seasoning, salt and pepper.
  3. Put the cooking oil in the preheated pan and carefully add the seasoned fish fillets to the pan.
  4. Cook fillets for about 2 minutes on each side depending on thickness until golden brown and cooked throughout.
  5. Place fillets on cut, open rolls.
  6. In a small bowl, combine mayonnaise, lemon juice, paprika and cayenne.
  7. Taste and adjust seasoning with salt and pepper.
  8. Assemble sliders using lemon mayo, lettuce, tomato and red onion.
  9. Use a bamboo skewer if needed to keep sliders standing.
  10. Serve with potato salad.

 

Florida New Potato Salad
  1. Combine all ingredients into a medium-sized mixing bowl.
  2. Stir ingredients to completely combine.
  3. Taste potato salad and adjust seasoning with salt and pepper.
  4. Serve cold.
